We’re looking for an established and impactful Digital Retail Experience Manager to join Sushi on a 12 month fixed-term basis, embedded within the marketing team of one of our highest-profile clients – Jollibee (see below). This new role in Jollibee’s UK marketing team offers the opportunity to establish their performance marketing model in the UK as well as pioneering projects which are key to their growth in this market.

Jollibee is a much-loved Filipino chain of fast food restaurants owned by Jollibee Foods Corporation. It is the market leader in its home country and as of January 2024, there are over 1,600 Jollibee outlets worldwide – with restaurants in Southeast Asia, the Middle East, East Asia, North America, and Europe. Jollibee is known globally for Chickenjoy, its flagship fried chicken, alongside its other bestsellers which include its Chicken Sandwich and Peach Mango Pie. In the UK, its restaurant locations are currently London, Liverpool, Leicester, Nottingham, Sheffield, Leeds, Newcastle, Reading, Cardiff, Glasgow and Edinburgh.


  • Serve as the country lead for Digital Marketing and performance-related campaigns.
  • Drive multi-channel engagement strategies, user-centric design, personalisation, customisation and real-time analytics and insights.
  • Establish and develop a comprehensive strategy to engage customers across various digital and performance marketing channels and campaigns including performance ads, retargeting, search, SERP, SEO, SEM, PPC, CRM, referrals and mobile.
  • With a strong focus on personalisation and customisation, implement data-driven techniques to improve conversion rate optimisation (CRO), paid media, search, mobile app campaigns and third-party delivery aggregator performance (Deliveroo, Just Eat, Uber Eats).
  • Champion data capture, organisation, utilisation and tracking to monitor digital interactions, gather insights into customer behaviour and make data-driven decisions to optimise the digital experience.
  • Operate predominantly within the Jollibee marketing team, serving as integral liaison with Sushi; in this hybrid, embedded role.


  • ESSENTIAL TRAITS: Analytical, Communication, Planning and Organisation, Stakeholder Management, Critical Thinking, Influencing, Attention to Detail, Initiative.
  • EXPERIENCE: 3-4 years experience in a Digital, eCommerce or Performance Marketing-based role or relevant digital marketing experience.
  • EDUCATION: Bachelor’s Degree (or equivalent) in Marketing, Communications, Business Studies, Data Analytics or similar studies.


  • Hybrid working: split between the Jollibee office, Sushi office, home and field work (store visits).
